Buffalo Chicken Pasta – a creamy stove top chicken pasta dinner that has all the flavor of Buffalo Chicken Wings! It is loaded with ranch dressing, two kinds of cheese, and plenty of buffalo sauce!
My family loves buffalo sauce. We always have the big size jar in the fridge at all times, and usually one in the pantry for back up. My son loves to mix it with a tiny bit of ranch as a dipper for chicken tenders, put on his mac and cheese, or even put on eggs. So when I was trying to come up with a dinner I knew he would enjoy, turning his favorite into a creamy buffalo chicken pasta seemed like a great idea!
Ingredients
- 12 oz short cut pasta, dried
- 8 oz cream cheese, cut into cubes
- 1 cup chicken broth
- 1/2 cup buffalo sauce
- 1/3 cup ranch dressing
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 pound cooked and shredded chicken
- 3/4 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
Instructions
- Bring a large pot of water to boil and cook pasta 1 minute short of the package directions.
- In a large skillet heat cream cheese, buffalo sauce, chicken broth, and ranch dressing together over medium heat until smooth and melted.
- Add garlic powder, salt and pepper and stir until combined.
- Mix in cheddar and mozzarella cheese until completely melted and smooth, stirring continually.
- Add cooked chicken and pasta and toss until everything is well coated and heated through.
- Serve immediately.
