Creamy Chicken Tortellini Soup

A quick and easy soup that is perfect for a cold night.  Warm up with this cozy soup filled with vegetables, chicken and tortellini all in a delicious creamy broth. 

I absolutely love soup on a cold night.  But sometimes soup can take forever to make, and I just don’t have time on busy weeknights to let soup simmer for an hour before dinner is done.  So this chicken tortellini soup is perfect, because it is ready in about 30 minutes.  Super comforting and ready fast?  That is my definition of perfection!

Ingredients

  • 1 tablespoon Olive Oil
  • 1 small Onion, finely chopped
  • 1 stalk Celery, finely chopped
  • 2 medium Carrots, peeled and diced
  • 4 cloves Garlic, minced
  • 6 cups Chicken Broth
  • 1 pound Chicken, cooked and shredded
  • 9 ounces Fresh Cheese Tortellini
  • 1/2 cup Heavy Cream
  • 1/3 cup Fresh Parsley, chopped
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

How to Make Chicken Tortellini Soup

  1. Saute together onion, celery, carrots and garlic until they are soft and tender
  2. Next pour in the chicken broth and season with salt, pepper and thyme.
  3. If you are using raw chicken, this is when you would add it. Let is simmer until it is cooked and then remove to shred it. 
  4. After the broth is simmering add in the tortellini and let them cook until they are tender (usually about 5-6 minutes depending on the package that you buy).  
  5. At the last minute stir in the creamy and parsley.  Adjust the seasonings as needed and you are ready to serve. ‘
