A Taco Rice Skillet is a delicious and easy dish that combines the flavors of tacos with rice, creating a hearty and flavorful meal. Here’s a simple and tasty recipe to make the best Taco Rice Skillet:

Ingredients

  • 1 lb (450g) ground beef (or substitute with ground turkey or chicken)
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 cup (190g) uncooked rice (white or brown)
  • 2 cups (480ml) beef broth (or chicken broth)
  • 1 can (14.5 oz/410g) diced tomatoes, with juice
  • 1 packet (1 oz/28g) taco seasoning mix (or homemade taco seasoning)
  • 1 cup (120g) shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 can (15 oz/425g) black beans, drained and rinsed (optional)
  • Salt and pepper, to taste
  • Olive oil, for cooking

Optional Toppings

  • Sliced avocado or guacamole
  • Sour cream or Greek yogurt
  • Chopped green onions
  • Fresh cilantro
  • Salsa or hot sauce
  • Shredded lettuce
  • Sliced jalapeños

Instructions

  1. Cook the Ground Beef:
    • In a large skillet, heat a little olive oil over medium heat. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain excess fat if needed.
  2. Add Vegetables:
    • Add the diced onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables start to soften. Add the minced garlic and cook for another minute until fragrant.
  3. Add Rice and Seasoning:
    • Stir in the uncooked rice and cook for about 1-2 minutes, allowing it to lightly toast. Sprinkle in the taco seasoning and mix well.
  4. Add Liquids and Beans:
    • Pour in the beef broth and diced tomatoes (with juice). Stir to combine. If using black beans, add them now.
  5. Simmer:
    • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed. Stir occasionally to prevent sticking.
  6. Add Cheese:
    • Once the rice is cooked, sprinkle the shredded cheese evenly over the top. Cover and let it sit for a few minutes until the cheese melts.
  7. Serve:
    • Serve the Taco Rice Skillet hot, with your choice of optional toppings.
