Healthy No-Sugar Orange Cake

Here’s a recipe for a healthy no-sugar orange cake that’s still delicious:

Ingredients:

  • 2 cups almond flour
  • 3 large eggs
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup (optional, adjust to taste)
  • 1/4 cup freshly squeezed orange juice (about 1-2 oranges)
  • Zest of 1 orange
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Orange Glaze (optional):

  • 1/4 cup Greek yogurt (or coconut yogurt for dairy-free)
  • 1 tablespoon honey or maple syrup
  • Zest of 1/2 orange
  • 1 tablespoon freshly squeezed orange juice

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a large mixing bowl, whisk together the almond flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, applesauce, honey or maple syrup (if using), freshly squeezed orange juice, and orange zest.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
  5. Pour the batter into the prepared cake pan and spread it out evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

For the Orange Glaze (optional):

  1. In a small bowl, whisk together the Greek yogurt, honey or maple syrup, orange zest, and freshly squeezed orange juice until smooth.
  2. Once the cake has cooled completely, spread the glaze over the top of the cake.
  3. Allow the glaze to set for a few minutes before slicing and serving.
