No-Bake Chocolate Oat Bars

Ingredients:

For the Base:

  • 2 cups rolled oats
  • 1 cup peanut butter (or any nut or seed butter)
  • 1/2 cup honey or maple syrup
  • 1/2 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Chocolate Topping:

  • 1 cup dark chocolate chips
  • 1/4 cup peanut butter (or any nut or seed butter)

Instructions:

  1. Prepare the Base:
  • In a large mixing bowl, combine rolled oats, peanut butter, honey or maple syrup, melted coconut oil, vanilla extract, and salt. Mix until well combined.
  1. Press into Pan:
  • Line a square or rectangular baking pan with parchment paper.
  • Press the oat mixture evenly into the bottom of the pan.
  1. Melt Chocolate Topping:
  • In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips and peanut butter together until smooth.
  1. Pour Chocolate Topping:
  • Pour the melted chocolate mixture over the oat base, spreading it out evenly.
  1. Chill:
  • Place the pan in the refrigerator and chill for at least 2 hours or until the chocolate is set.
  1. Cut into Bars:
  • Once the bars are set, lift them out of the pan using the parchment paper.
  • Cut into bars or squares using a sharp knife.
