Healthy Bean Salad Home Recipe

Here’s a simple recipe for a delicious bean salad that you can easily make at home:

Ingredients:

  • 1 can (15 oz) of your favorite beans (such as black beans, kidney beans, chickpeas, or a mix)
  • 1/2 red onion, finely chopped
  • 1 bell pepper (any color), diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro or parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar or lemon juice
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and pepper to taste

Instructions:

  1. Drain and rinse the beans under cold water to remove excess sodium and starch. Place them in a large mixing bowl.
  2. Add the chopped red onion, diced bell pepper, halved cherry tomatoes, and chopped cilantro or parsley to the bowl with the beans.
  3. In a small bowl, whisk together the olive oil, red wine vinegar or lemon juice, and honey or maple syrup (if using). Season with salt and pepper to taste.
  4. Pour the dressing over the bean mixture and toss everything together until well combined.
  5. Taste and adjust the seasoning if necessary.
  6. Cover the bean salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
  7. Serve chilled as a side dish or a light meal on its own. Enjoy your homemade bean salad!
