Ingredients needed:
- 300g of pasta of your choice (measured before preparation)
- 2 avocados
- a few leaves of fresh basil
- 1 hot pepper
- 1 head of garlic (previously drizzled with olive oil and baked on baking paper to melt)
- 75g cashews
- 120g of parmesan
- 4-5 tablespoons of olive oil
- Salt and pepper to taste
- Burrata cheese, Greek yogurt or something of choice for serving
Method of preparation:
- Peel the avocado, then put it in a blender along with the pepper, fresh basil, roasted garlic (squeeze out the insides), Parmesan, cashews, spices and a little oil.
- Blend until you get a homogeneous mixture.
- Cook the pasta according to the instructions and add the green sauce to the pan and mix well to combine.
- You can serve on top with burrata cheese or Greek yogurt and spices.
