Garlic Steak and Potatoes
Ingredients:
- 1.5 lbs (680g) steak (such as ribeye, sirloin, or filet mignon), cut into bite-sized pieces
- 1.5 lbs (680g) baby potatoes, halved or quartered if large
- 4 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons butter
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the baby potatoes with 2 tablespoons of olive oil, half of the minced garlic, dried rosemary, thyme, oregano, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until golden brown and tender.
- Cook the Steak:
- While the potatoes are roasting, heat a large skillet over medium-high heat. Add the remaining 2 tablespoons of olive oil.
- Season the steak pieces with salt and pepper. Once the skillet is hot, add the steak pieces in a single layer. Cook for 2-3 minutes on each side, or until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
- Combine Steak and Potatoes:
- In the same skillet, reduce the heat to medium. Add the butter and the remaining minced garlic. Sauté for about 30 seconds until fragrant.
- Add the roasted potatoes to the skillet and toss to coat in the garlic butter. Then, add the cooked steak pieces back to the skillet and toss everything together until well combined and heated through.
- Serve:
- Garnish with freshly chopped parsley if desired. Serve immediately.
