Every time I visit my grandma, the first thing I want her to make is her famous Sweet Mini Peppers Stuffed with Eggs and Feta Cheese. If you like peppers and feta cheese, this will be your new favorite recipe. I know it is mine and my husbands’s for sure. Even my 3-year-old loves these stuffed mini peppers.
Ingredients:
- 8-10 sweet mini peppers
- 4 large eggs
- 1/4 cup crumbled feta cheese
- Salt and pepper to taste
- Optional: chopped fresh herbs such as parsley or chives for garnish
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Peppers: Slice the mini peppers in half lengthwise and remove the seeds and membranes. Place them on a baking sheet lined with parchment paper or a lightly greased baking dish.
- Prepare the Filling: In a bowl, crack the eggs and beat them until well mixed. Season with salt and pepper to taste. Stir in the crumbled feta cheese.
- Stuff the Peppers: Spoon the egg and feta mixture into each pepper half, filling them evenly.
- Bake: Place the stuffed peppers in the preheated oven and bake for about 15-20 minutes, or until the eggs are set and the peppers are tender.
- Serve: Once done, remove the peppers from the oven and let them cool for a few minutes. Garnish with chopped fresh herbs if desired, and serve warm.
