Ingredients:

For the Cake:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

For the Cheese Layer:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

For the Apricot Topping:

  • 1 can (15 oz) apricot halves in syrup, drained
  • 1/4 cup apricot preserves
  • 1 tablespoon lemon juice

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.

4. Beat in the eggs, one at a time, then stir in the vanilla extract.

5. Gradually mix in the dry ingredients until well combined, then add the milk and mix until smooth.

6. Pour the cake batter into the prepared cake pan and spread it out evenly.

7. In another bowl, beat together the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.

11. Spoon the melted apricot preserves over the apricots on the cake.

12. Bake the cake in the preheated oven for 35-40 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
